SUBSTITUTE MILK RECIPES

RICE MILK

50 gram (2 oz) organic whole grain rice, 1.2 litres (2 pints) filtered or bottled water. You can add 1-2 tsp honey or rice syrup and one vanilla pod. Wash the grains, bring to boil, simmer for thirty minutes. Liquidise and strain. You can use the rice residue in other recipes. At this point you can add more water if the milk is thicker than desired. When milk is completely cold, a tablespoon of walnut or sunflower oil can be added. Keep milk in fridge.
The milk can also be made using rice flakes, then only taking ten minutes.

OAT MILK

Make as above cooking groats like brown rice, or using oatflakes - porridge oats - taking just ten minutes.

ALMOND MILK

Use 125gram (4 oz) blanched almonds, liquid quantity as above, liquidise in blender, strain and serve. Add honey or similar and a pinch of cinnamon.

SUNFLOWER OR SESAME SEED MILK

As above

DATE DRINK

Soak and boil some organic dates, or any unsulphured dried fruit. The result when strained is a pleasant sweet drink, which can be used instead of milk over cereals, etc
